Citrusy Kale Salad W/ Blueberries and Pepitas (& Variations)

- 1 bunch curly kale (I tried lacinato kale and next time will try Russian kale)
- 2 tablespoons extra virgin olive oil
- 3⁄4 teaspoon sea salt
- 1 lemon, juice and zest of
- 1 orange, juice and zest of
- 1 teaspoon honey (or alternative sugar)
- 1⁄2 avocado, cubed (second taste test or helping I skipped the avocado)
- 1 cup fresh blueberries
- 2 tablespoons pepitas (toasted)

- Variations-Instead of blueberries and pepitas try any of the following: blackberries and walnuts, sliced strawberries and pecans, raspberries and sliced almonds, marionberries and hazelnuts (<<--Oregon style!). I chose blackberry and walnut. There is a blackberry bush down the street that now is producing and I had to act quickly before the deer devoured my secret stash.
- Remove kale leaves from the stem and chop into bite sized pieces (or tear using hands).
- Place kale in a large bowl and drizzle 1 tablespoon olive oil and salt into leaves, massaging with hands. Do this for a few minutes, massaging the olive oil well into the leaves. Set aside. (Leaves should begin to wilt a little.).
- Whisk together lemon and orange juice and zest, remaining 1 Tbsp olive oil and honey. Season with a small amount of salt and pepper to taste. Pour dressing over the kale leaves.
- Add the avocado, berries and seeds and toss all together. Do not add the dressing, avocado, berries or seeds to the salad until just before serving.

Instead of Kale, will baby spinach work as well?

I wanted to try the crispy soy roasted kale chips, but there is no recipe. I make kale chips in my food dehydrator and was intrigued by a new flavor. I absolutely loathe the videos, sometimes they won't play, and I prefer to have just the ingredients listed. Is there some way you could do both? I know younger users probably don't read well, but us old timers seem to retain better by reading.

Made this tonight while looking for a new way to spice up the salads in our house. Definitely an Amazing salad. So flavourful! I chose to add some chopped chicken breast, grape tomatoes and crumbled Feta cheese! ABSOLUTELY AMAZING!!

So Bluetiful! Loved the Russian kale and I added dinosaur kale. Love the blueberries and the pepitas oh and the creaminess from the avocados.

Yum! This is a fantastic combination of bitter greens, creamy avocado, sweet berries, crunchy pepitas, and tangy dressing. I will definitely be making this again! I felt that the avocado was integral to the recipe.

Great salad idea. I used pistachios as well as the pepitas. And a whole avocado. Used olive oil, lemon, garlic and seasoning for the dressing.

Sorry forgot to mention that the kale salad was excellent. Didn't have pepitas, but I used blueberries and toasted, chopped brazil nuts.

I used baby spinach and it turned out really great. Lots of flavours and interesting textures and colours.

Yummy, yummy -- so fresh! And so easy. I did not massage the oil and salt into the kale. Instead I mixed all the oil and salt with the remaining dressing ingredients. I used agave instead of honey. I cubed a whole firm avocado and mixed it with the kale. Then I tossed with the dressing. If the blueberries are firm, I add them as well. The kale will "wilt" quickly, even without massaging. I sprinkle with nuts at the table. I have also used strawberries and almonds. Love this salad! Thanks for posting.
